I'm sure you read my post on Tuesday about going out for dinner over the weekend and bringing home leftovers. I always do. I always pack 1/2 the meal to take home. Somehow, I often share that meal with my husband. I try to get him to save part of his meal but that doesn't work very often, if at all.
When I take the meal home, I am always planning to eat it, rather than have to cook the next day.
I decided to add sauteed sun-dried tomatoes, zucchini and yellow squash to my left over pasta, veggie, chicken dish. I also, added about 2oz of grilled chicken. It was a blend of beautiful colors. Very pleasing to the eye and to the palate. It's always an easy choice to simply add veggies to leftovers to create a healthy meal the following day. Not much pasta, mostly veggies and chicken. Doesn't this look yummy?
The next time you have leftovers, saute some veggies, enjoy and be HEALTHY!
