Recipe Wednesday - Pumpkin Pancakes




It's Recipe Wednesday, so it's time for another recipe. I was a little skeptical about this one, but it turned out to satisfy my craving for pancakes and it tasted pretty darn good, too. It's loaded with fiber and it's fat free. It also has a serving of vegetables. It's a win, win, win recipe.







Pumpkin Pancakes

3 egg whites (or the equivilant in Egg Beaters)
1/2 cup quick cooking rolled oats
1/4 cup canned pumpkin
1/2 tsp. baking powder
1/4 tsp. pumpkin pie spice
dash of salt
1 pkt of Truvia

In a blender (or Magic Bullet) blend everything until it is liquid.
Preheat a non stick skillet and spray with cooking spray. Pour 3 pancakes. Cook several minutes on each side. These pancakes will not bubble up, so you have to watch them.


These pancakes are 4 Weight Watcher's points. If you add sugar free syrup, the points value goes up to 5. That's not bad for a tasty breakfast.
