It's Wednesday, so it's time for another recipe. I made this one up after eating some delicious Sausage and Lentil Soup at a national Italian restaurant chain. I don't have the nutritional information, but it is 1 1/2 points per cup on the Weight Watcher's program.
Turkey Sausage & Lentil Soup
8 oz. Turkey Breakfast Sausage
1/4 tsp. cumin
1/4 tsp. garlic powder
1/2 tsp. Italian seasoning
1/8 tsp. black pepper
1/2 tsp. salt
1/2 cup chopped onions
2 cups canned tomatoes, chopped
1/2 pound dry lentils
6 cups fat free chicken broth
2 cups water
1 1/2 tsp. ham flavored soup base
Brown turkey breakfast sausage with onions in a non stick skillet. Break apart the turkey breakfast sausage as it browns. Drain off any fat and transfer to a stock pot. Add all ingredients and bring to a boil. Reduce heat and simmer for 30 minutes or until lentils are tender.
