Mustard Dill-Crusted Salmon! Mmmmm! Mmmmm!

I tried this recipe recently.  It was absolutely yummy!  I don't particularly like salmon but this was a good recipe!  Now, I can finally add salmon to the menu, occasionally!  Welcome, salmon other than salmon croquettes. 

Ingredients
2 tablespoons herb garlic butter
2 tablespoons fresh chives, finely chopped
3 tablespoons whole grain mustard
1 tablespoon dill relish
1 cup panko bread crumbs
1/2 teaspoon caraway seeds
1 1/2 cups Francaise simmer sauce (I only used 2/3 of a cup to reduce the saturated fat content)
4 salmon fillets (skin removed; about 1 1/2 lb)
Prep

  • Preheat oven to 400°F. Melt butter in microwave or on stovetop.
  • Chop chives.
Steps
  1. Stir into butter: mustard, relish, bread crumbs, caraway seeds, and chives until well blended.
  2. Place sauce in 13- x 9-inch baking dish; top with salmon and then bread crumb mixture. Bake 15–18 minutes or until fish is 145°F (or opaque and flakes easily). Serve.

Note: Remember Salmon is high in healthy fats. We had veggies on the side...no added salt or butter.
