It is Wednesday again and I'm in the mood for a low calorie, high fiber, filling soup that tastes great. There are so many variations on this Vegetable Soup and it can be changed based on what veggies you might have on hand
1 cup of chopped cabbage
1 chopped onion
3 carrots, chopped
3 stalks of celery, chopped
1 16 oz. pkg. of frozen green beans
1 pkg of dry onion soup mix
1 pkg of dry chicken soup mix
1 14 oz. can of chopped tomatoes
6 cups of water
Combine water, soup mixes and raw veggies in a stock pot. Bring to a boil, reduce to simmer. Cook until veggies are tender. Add grean beans and tomatoes in last 10 minutes of cooking time.
You can add other veggies if you wish: corn, zucchini, spinach, cauliflower, broccoli, frozen peas. Enjoy!
