Recipe Wednesday - Fish Tacos


It's time for another recipe. I'm in the mood for a fish taco, so I'll share my recipe. I ate these at a local Mexican restaurant and found them to be super delicious. I made a mental note of what was in them so I could duplicate the recipe at home. It was much easier than I thought it would be.

Fish Tacos

Serves 1

2 ounces mild fish like tilapia
1/2 cup green cabbage thinly sliced
1 tsp. swet pickle relish
1 Tbsp. fat free mayo
1/3 tsp. chipolte in adobo, chopped
1 fat free, high fiber tortilla
2 Tbsp. pico de gallo

Cook the fish in a non stick skillet over medium heat. I sprinkle my fish with a salt free seasoning like Spice Hunter Mexican seasoning.

While the fish is cooking, make your chipotle tartar sauce by mixing the relish, mayo and chipotle sauce.

Assemble your taco. Place the cooked fish on the tortilla shell. Top with cabbage, pico de gallo and your chipotle tartar sauce.

One of these tacos is just three points on the Weight Watcher's program.
