Recipe Wednesday - Breakfast Burrito




It is Wednesday, so, again, it's time for another recipe. I got up this morning and was hungry for a breakfast burrito from a local fast food chain. I really love them, but I don't want all of the fat and calories theirs offers, so I decided to create a healthy alternative. Theirs are small and I eat more than one. Mine are big and full of veggies and fiber and one will fill me up.

Here's my version of a Breakfast Burrito.


2 Tbsp. chopped onions
2 Tbsp. chopped mushrooms
2 Tbsp. shredded potatoes (I use frozen)
2 Tbsp. Morningstar Farms Sausage crumbles (vegetarian)
2 Tbsp. salsa (optional)1/2 cup egg substitute like Egg Beaters
1 slice of fat free cheese, sliced in half
1 medium sized high fiber, low fat soft tortilla

In a nonstick skillet sprayed with nonstick cooking spray, over medium heat, saute onions, mushrooms, potatoes and sausage crumbles for 5 to 6 minutes. I sprinkle with freshly ground pepper. Add egg substitute and stir until eggs reach the desired doneness.

Lay the cheese slice across the center of your tortilla and add cooked egg and veggie mixture on top of the cheese to melt it.

Wrap up the burrito and enjoy.

You can add other veggies if you want. Use what you have in your fridge. A few spinach leaves or some chopped zuchinni are also delicious in this burrito. Just add them to the veggie saute before the eggs.
