It's time for another new recipe from my kitchen to yours. Today, I'm making ground chicken burgers with a tequilla lime flavor. But don't worry if you can't find ground chicken for a reasonable price, just put a pound of boneless skinless chicken breast pieces into your food processor and pulse for a few seconds and you have made your own ground chicken for a fraction of the going price. It does help to cut the chicken breasts into smaller pieces before you process them.
Tequila Lima Ground Chicken Burger
1 lb. ground chicken
1/4 cup minced onion
1 tsp. Italian Seasoning
1/2 tsp. salt
1/8 tsp. pepper
1/2 cup breadcrumbs
1 egg or 1/4 cup egg beaters
2 Tbsp. lime juice
1Tbsp. tequila
Preheat a grill pan over medium heat. Spray the grill pan with non stick cooking spray.
HINT: To make sure your onions are cooked in your burger, place them in a glass bowl and microwave on high for 2 to 3 minutes. This makes them nice and tender instead of crunch in your burgers.
Combine all ingredients in a mixing bowl. Mix well and divide into 6 burgers.
Cook in your grill pan for 6 to 8 minutes on each side, or until chicken burger is cooked through.
Serve on a wheat bun with mixed greens and chipotle mayo and a slice of tomato. I served mine with thinly sliced, sauted zuchinni.
I don't have the nutritional info for this recipe, but it does work out to 4 points on the WW program including a 1 point wheat bun and fat free chipotle mayo and lettuce and tomato.
To make your own chipotle mayo, simply chop some chipotle in adobo and add it to some mayo, fat free, light or regular. We keep an entire jar of mayo mixed with chipotle in the fridge.
