Cherry Almond Clafoutis

Ok...so it's Wednesday and I declared Wednesday as Weight Watchers Wednesday and today I don't have a WW tip or idea for you!  Hmmmm?  Well, I think Wednesdays are simply going to be about food because there are so many things I find that I want to try and share and I don't think I want to limit them to Weight Watchers.  I'm sure you will enjoy them all the same.  They'll always include a healthy spin on recipes or food tips.

This week, I share a recipe.  Doesn't this sound YUMMY!  I want to try it.  I've bought all of the ingredients and plan to try it this week and will report back, once I do.  However, if you give it a whirl before I do, please share.

Cherry Almond Clafoutis

Ingredients:I
1 tsp of butter
1/4 cup of Agave
1 tbsp sugar
3/4 soy, almond or rice milk
3 large eggs
3/4 almond meal (to create pulse 1 1/4 cup of blanched almonds in a food processor until the consistency of corn meal.)
1/4 cup whole wheat pastry flour
1/2 tsp almond extract
1lb fresh or frozen cherries, pitted

Directions:
Preheat the oven to 325 degrees.  Butter a 9" square or round baking dish and sprinkle the bottom with 1 tbsp of sugar.  In a large bowl whisk together the 1/4 cup agave with the milk, eggs, almond flour meal, whole wheat pastry flour and extract until the batter is smooth.

Scatter the cherries(if frozen you do not need to thaw) in the baking dish and pour in the batter. Bake for about 50 minutes, until a tooth pick inserted in the center comes out clean.  Let cool slightly before serving.  Serves 8.
